Champlain Islands Menus Revealed

We're excited to share the aid station, Post-Ride Barbecue, and Meet the Farmers Dinner menus for this year’s Farm to Fork Fondo - Champlain Islands on July 20-21 at Snow Farm Vineyard in South Hero, VT. We’re excited to feed the hundreds of hungry cyclists heading to the archipelago in Lake Champlain next weekend with locally-sourced delights!

Aid Station Small Bites

Each of the 'small bites' below is prepared by a local chef, served at one of our participating farms, and features an ingredient from that farm.

Post-Ride Barbecue

All dishes made from scratch, using as many ingredients as possible from local farms. Vegetarian options available.


  • Pearled couscous with paprika peppers, scallions, feta, and roasted tomatoes with preserved lemon dressing

  • Salad of young brassica greens, roasted carrots, crumbled Parmesan, toasted quinoa, and flowers with ginger scallion dressing

  • Scallion-cheddar cornbread with Vermont sharp cheddar

  • Braised collard greens

  • Cider-poached beets with cucumber, herbed labneh, and mint

  • Slow roasted barbecue pork shoulder with Vermont maple syrup

  • Grilled chicken, marinated with garlic, lemon, and herbs

  • Barbecue-marinated tofu with charred scallions

  • Dessert

    • Sliced melon

    • Buckwheat chocolate chip cookies

    • Rosemary shortbread cookies

  • Drinks

Hors d'Oeuvres

  • Manchego, membrillo from Vermont quinces, parsley, and balsamic-port reduction

  • Crostini with charred eggplant, burrata, and tomato jam

  • Crostini with whipped goat cheese, beets poached in Vermont maple, and mint

Cheese and Charcuterie

  • Cheese and charcuterie boards with cheeses from Jasper Hill

  • Seasonal pickles (peppers, pickles, beets, and apples)

  • Local fruit preserves

  • Herbs and crackers

Bread at Tables

  • Naturally leavened bread with whipped herb butter

Raw Course
